What does a cruise ship bartender do?

A cruise ship bartender prepares and serves alcoholic and non-alcoholic drinks to passengers in bars and lounges. They mix cocktails, recommend beverages, operate the bar service system and maintain cleanliness while providing friendly, professional service throughout the day and evening.

On board a P&O Cruises ship there are multiple bars including pool side, lounges, specialty bars and late night venues. Bartenders work behind the bar preparing drinks quickly and consistently while interacting with guests. They must know classic cocktails, wine service basics and popular holiday drinks.

Bartenders also maintain stock levels, prepare garnishes, clean equipment and follow strict hygiene and alcohol service rules. During busy periods such as sailaway parties or evening entertainment, bartenders may serve hundreds of drinks in a shift. The role requires efficiency, teamwork and strong communication with bar waiters and supervisors to keep service flowing smoothly.

Typical bartender duties

  • Mixing cocktails and serving beverages
  • Recommending drinks to guests
  • Handling onboard payment systems
  • Maintaining bar cleanliness and stock
  • Following responsible alcohol service rules

What makes P&O Cruises bar roles unique?

The bar team delivers drinks in vibrant venues, often working with exclusive onboard spirits like Marabelle Gin and Golden Tide Rum, crafted in the ship’s own stills. You’ll develop a wide drinks portfolio, host tastings and help create memorable holiday moments.

Can bar staff get promoted on cruise ships?

Yes. P&O Cruises bar staff can progress through several career levels. Promotions depend on performance, experience and leadership skills. P&O Cruises Bar Career Passport Programme also supports structured, long‑term growth.

Entry-level positions such as bar utility or bar waiter often lead to bartender roles after gaining experience and demonstrating strong service skills. In the bar team you can progress from Bar Utility → Bar Waiter → Bartender → Bar Team Leader → Bar Manager. With experience, you can also specialise in roles like Gin/Rum Specialist or Senior Mixologist. Bartenders who consistently perform well may be promoted to supervisory positions overseeing bar teams or multiple venues.

With additional training and leadership experience, senior staff can progress to manager roles responsible for both food and beverage operations.

Training, upskilling and internal promotions are strongly encouraged by P&O Cruises.

How is performance evaluated in the bar department?

Performance is typically measured through a combination of guest service delivery, product knowledge, teamwork, professionalism, compliance with company standards and contribution to business goals.

Bar leaders provide regular coaching and feedback, helping team members identify strengths and opportunities for development.

Are there opportunities for advanced cocktail training or mixology courses?

Yes. Bar professionals are encouraged to develop their expertise through ongoing learning and role-specific development opportunities. Depending on your role and experience, this may include advanced product knowledge, cocktail preparation techniques and learning about emerging beverage trends.

Developing specialist skills can support future progression into senior bar and beverage leadership roles.

Are there sales targets, incentives or competitions?

Commercial awareness is an important part of working in the bar department, and team members are encouraged to promote products and experiences confidently and responsibly. Incentives, campaigns or recognition programmes may be offered at certain times, depending on business requirements and operational priorities.

The primary focus always remains creating outstanding guest experiences.

What is it like working in the bar team on a cruise ship?

Working as a cruise ship bartender is fast-paced and social. Bartenders serve drinks in multiple venues across the ship while interacting with international guests. The job involves long hours and busy shifts, but it also offers the chance to travel, meet new people and develop strong hospitality skills.

Most P&O Cruises ships have 10 or more bars, meaning bartenders rotate between venues such as pool bars, lounges and late-night venues. During the day you might serve frozen cocktails by the pool, while evenings involve preparing classic cocktails in busy lounges or entertainment venues.

The pace can be intense during peak periods like evening shows or sailaway parties. Bar team member tasks include taking orders, mixing drinks, restocking supplies and chatting with guests. Although the job is demanding, many crew enjoy the energetic environment, strong team culture and opportunities to explore destinations during port days.

What makes cruise bartending unique

  • Busy, high-volume service
  • Interaction with international passengers
  • Rotating bar venues
  • Strong team atmosphere
  • Opportunities to travel

How are members of the bar team paid? Can i earn tips?

P&O Cruises includes service charges in the guest fare, so bar staff receive a consistent monthly salary during their assignment rather than relying on tips. Some roles may earn small incentives for sales targets. Because accommodation, meals and uniform care are included, most crew save a large portion of their income.

How many hours do cruise ship bartenders work?

Bar crew typically work 9–12 hours per day, seven days a week, in rotating shifts from late morning through to the early hours. There are no full days off during your contract, but you always get time off to rest, relax or explore ashore.

Cruise ship bartender hours depend on the ship’s schedule and venue. Shifts often cover afternoon and evening bar service, with peak activity during entertainment hours. You’ll work seven days per week during their assignment, with scheduled rest periods each day.

Bars on P&O Cruises ships operate from late morning until after midnight. Because of this, bartenders work rotating shifts that ensure venues are staffed throughout the day and evening. Many bartenders work afternoon-to-late-night shifts when guest demand for drinks is highest.

Although crew work every day during their assignment, maritime labour regulations require minimum rest hours between shifts. You’ll usually receive breaks during quieter periods and may have time to go ashore on port days. While the hours are demanding, you benefit from free accommodation, meals and the opportunity to travel the world while getting paid.

Typical schedule:

  • 9–12 hour shifts
  • Afternoon and evening peak periods
  • Seven days per week during assignments
  • Breaks between service periods
  • Opportunities to explore ashore

Is there a peak / busy time on board?

Work is busiest in the evenings or during events like deck parties.

Will I be assigned to the same bar each day, or rotate between venues?

Our ships feature many different bars and we encourage experience in all venues. Your venue/s will be confirmed once you’re on board.

Are breaks scheduled or flexible based on bar activity?

Breaks are planned around operational requirements and guest demand. During quieter periods, breaks may be more flexible, while busy service times require careful coordination to ensure guest service standards are maintained.

All schedules operate within maritime and company working-time requirements.

Do bar shifts change depending on sea days and port days?

Yes. Bar operations often vary between sea days and port days. Sea days can be particularly busy because more guests spend time enjoying onboard venues, entertainment and leisure facilities. In contrast, port days may have different service patterns depending on guest activity ashore.

Shift schedules are designed to match guest demand while maintaining excellent service throughout the day and evening.

What are the distilleries at sea?

We craft two exclusive spirits on board P&O Cruises ships:

  • Golden Tide Rum – made in Arvia’s rum still ‘Aurelia’ during Caribbean sailings, created with The Tidal Rum.
  • Marabelle Gin – distilled in Iona’s still ‘Columba’, crafted with Salcombe Distilling Co.

Both are produced by our expert Gin/Rum Specialists.

Perfect for those interested in cruise ship bar jobs, one bartender holds a tea towel while the other faces away from the camera.
